WHOLEMEAL MUFFINS WITH CHEESE, SWEET CORN & CHIVES

Serves: 12 | Preparation: 15 minutes

Ingredients

  • 1 cup self-raising flour
  • ½ cup wholemeal self-raising flour
  • ½  cup reduced-fat cheese, grated
  • 2 tablespoons chives, chopped
  • 1 cup corn kernels, drained
  • 2 tablespoons margarine, melted (can substitute 2 tablespoons of olive oil)
  • ¾ cup reduced-fat milk
  • 1 egg, beaten lightly
  • Cooking spray

Method

  1. Preheat oven to 200°C /180°C fan-forced
  2. Spray 12-hole muffin pan
  3. Mix flour, cheese, chives and sweet corn
  4. Beat melted margarine with milk and egg
  5. Gently fold wet ingredients into dry ingredients until just mixed – muffin mix should be lumpy
  6. Spoon into muffin pan and bake at 200°C 15-20 minutes

Alternatives

  • Use frozen or canned corn kernels (drained) as an alternative to fresh corn
